I use to think I did not like cranberry on turkey until we found this recipe. It could not have been that all I had ever had was that yucky jelly stuff from a can. We found this recipe on food network and really like it, thanks Emeril!!
~Orange Cranberry Sauce~
1 bag cranberries
2 oranges, zested and juiced
1/4 cup ruby port wine
( I have only uses a red Zinfandel wine it is what we had kicking around I would not know the difference anyway I am not up to date on my wine tasting. I am sure a red cooking wine would work too.)
3/4 cup sugar, or more as needed
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1 cup toasted pecans or walnuts
( we have never used the nuts and I think it is good without)
Combine all ingredients together in medium sauce pan, bring to boil, reduce heat to simmering and cook until cranberries are tender, stirring occasionally. Continue cooking until sauce thickens, taste and add more sugar as needed. Fold in toasted nuts, cool and serve at room temperature.
ENJOY! We love Thanksgiving and trying new recipes. We love to add new things to our spread we serve.
P.S. Jake thinks I am CRAZY I put up my Christmas Tree today. I have been dying to, I got a new tree and decorations this year! I love it, my tree is a LITTLE bigger than I thought it would be. Bigger is always better right?
